Our Story
Florin takes its name from the gold coin minted in 13th-century Florence — a currency built on trust, craft, and the idea that quality endures. That same spirit guides everything we do, from sourcing to service.
Head chef Marco Russo spent fifteen years cooking across Italy and France before bringing his open-fire techniques to Dublin. The menu changes with each season, built around relationships with local farmers and Irish artisan producers.
